Convection oven was baking unevenly

Our convection oven had started browning everything on one side. The technician tested the elements, replaced the fan motor and recalibrated the thermostat, then had us bake off a tray before he left so we could see it was right. Parts for our model were not on the van, so it took a second visit — he told us that up front, and the return trip was quick. It bakes evenly now.

Dryers down in a busy laundromat

A couple of our dryers went down in the same stretch, which empties a laundromat fast. They came out, found a shot belt on one and a clogged exhaust run on the other, and handled both in a single trip. Our conveyor dish machine stopped reaching rinse temperature, which in a restaurant is not a small problem. Walk-in iced over and stopped holding temp

The evaporator in our walk-in was a solid block of ice and the box would not hold temperature. Rather than chipping away at it, the tech defrosted it properly, replaced a dead defrost timer and resealed a door sweep that had been letting warm air in for months. He explained why it iced up in the first place, which nobody before him had bothered to do. The box has been steady since.

Bar ice machine was making slush

The ice machine behind our bar was turning out soft cloudy cubes and jamming the bin. The tech descaled the whole machine, replaced the water inlet valve and adjusted the harvest cycle, then explained why scale builds up so fast on our water and which filter to run. The cubes are clear and hard again and the bin has not jammed once. He cleaned up after himself too, which I notice.

Reach-in went warm in the middle of prep

Our reach-in started drifting warm during prep and we were looking at a lot of product we could not afford to lose. The technician worked around the line instead of shutting the kitchen down, found a torn door gasket and a condenser nobody had cleaned in far too long, and got the box holding temperature again. He wrote down what our own staff should be cleaning between visits. We have had him back for maintenance since.
